We’ve received the first snow fall on the mountains!  Are you in-shape for skiing, snowboarding or snowshoeing this snow season?  Here’s a chance to get you prepped and primed for the slopes.  The time to start conditioning is now.  This is the last TRX Camp of the year!
TRX Camp starts Monday, and it’s a great opportunity for you to get a jump-start.  Join us for 2 weeks of body sculpting, core conditioning and fun!

Chicken Barley Soup (10 servings)

Here is a great option for the skiing, snowboarding or snowshoeing trail!

Ingredients:

  • 1 pound, Chicken, cubed
  • 2 tablespoon, Extra Virgin Olive Oil
  • 2 Garlic Cloves, chopped finely
  • 1 Onion, chopped finely
  • 1 large Sweet Potato, peeled and cubed
  • 1 large Carrot, peeled and sliced
  • 3 stalks of Celery, chopped
  • 1 large Tomato, chopped
  • 1 teaspoon dried Thyme
  • 1/2 cup Pearled Barley
  • 2 liters low-sodium Chicken Broth (you can make your own broth)
  • Pepper

Directions:

  1. Place barley in bowl with just enough water to cover it.  Add olive oil on medium heat to an 8-quart stockpot.
  2. Add chopped onion and garlic to olive oil, cooking for 5 minutes.
  3. Add chicken to stockpot, along with black pepper.  Brown for 5 minutes.
  4. Add chicken stock, vegetables and spices to pot.
  5. Drain water from barley.  Add barley to soup.
  6. Let soup boil for 30 minutes on medium heat.
