Spring Chicken Salad (serves 4)

Ingredients:

  • 2 tablespoons fresh Chives, chopped
  • 2 tablespoons fresh Tarragon, chopped
  • 2 tablespoons Balsamic Vinegar
  • 1/4 cup low-fat plain Greek Yogurt
  • Pepper, freshly ground
  • 1/2 teaspoon Himalaya Salt
  • 1/4 cup Udo’s 3-6-9 DHA Oil Blend
  • 4 Romain Lettuce hearts
  • 1 Rotisserie Chicken, skin removed and meat shredded (about 2 cups)
  • 1 Cucumber, peeled, halved lengthwise, seeded and sliced
  • 4 radishes, cut into wedges
  • 1 yellow bell pepper, thinly sliced

Directions:

  1. Pulse chives, tarragon, vinegar, yogurt, salt and pepper to taste in blender or Vitamix.
  2. Slowly drizzle Udo’s Oil into blender and pulse to make a thick dressing.
  3. Toss romaine, chicken, radishes, and bell pepper with dressing in a large bowl.
  4. Season with pepper and enjoy!
